2017 Certified Master Chef (CMC) Exam, September 30th - October 8th

There are currently 67 Certified Master Chefs and 11 Master Pastry Chefs in the USA.

The title of Certified Master Chef (CMC), presented solely by the American Culinary Federation (ACF) in the U.S., is the highest level of certification a chef can receive. It represents the pinnacle of professionalism and skill. Today, there are only 67 CMCs and 11 Certified Master Pastry Chefs® (CMPC) in the nation. The last CMC exam was held in 2014 at Le Cordon Blue College of Culinary Arts in Los Angeles, Pasedena, California.

To apply for the CMC exam, a candidate must be a Certified Executive Chef® or Certified Culinary Educator®, provide two letters of recommendation from current CMCs or CMPCs, and have completed education courses on sanitation and food safety, cost management, management and wine. The candidate must also secure funding for the cost of the exam process including the exam fee, travel expenses and practice materials.

During the eight-day exam, candidates must maintain an average score of 75 out of 100 points to be eligible to continue. Scores are tallied based on kitchen skills, plate presentation and taste. Candidates are tested on the following subjects by ACF-certified chefs:
Healthy cooking
Buffet catering
Classical cuisine
Freestyle cooking
Global cuisine
Baking and pastry
Continental and Northern Europe cuisines
Market basket

The 2017 ACF-CMC Exam is scheduled for September 30th - October 8th 2017 at Schoolcraft Community College in Livonia, Michigan. Currently 14 spots are available for the exam.

Earning the title of Certified Master Chef, the highest level of accreditation from the American Culinary Federation, is no easy feat. In fact, there are only 67 chefs in the U.S. who have gotten the certification (plus eleven Certified Master Pastry Chefs). There could soon be a Certified Master Chef in our midst, but it's likely you haven't heard of him. He's Travis Smith, chef/owner of Bistro Colorado, at 1552 Bergen Parkway in Evergreen.

Colorado only has a handful of working chefs who have earned the Certified Master Chef honors; two of them are Ed Janos of Cook's Fresh Market, on the 16th Street Mall, and John Johnstone, who works at the Broadmoor Hotel in Colorado Springs. With a little luck, Smith will soon be added to that roster.
