In the name of safety all of the containers on board this vehicle are required to be tethered to a solid part of the frame. Having closed containers of booze rolling all over the streets of Denver isn't safe.
If Denver won't have these vehicles what about beefing up the frame, adding some serious suspension, and off road tires then offering them for rent on private land and trials? BTW, you'll thank me for the tethered containers if the mountain bike version becomes reality. Bar stools with seat belts might be a good idea after all...

After thinking about it for a few minutes there are some design details for the off road version that are going to make this an expensive and complicated build:
Problem: Beer kegs and excessive shock and motion aren't good for draft beer systems.
Solution: Develop a gyro stabilized refrigeration compartment, could use ice to keep the cooling system simple or come up with a low voltage, compressor powered cooling unit that runs on solar and/or peddle powered generator and batteries.
Problem: Patrons can't watch the game while "working out" at the bar.
Solution: Integrate OLED displays in to the surface of the bar, mount speakers in the overhead space, add a gyro stabilized ASAT antenna to the roof of the vehicle (configured to fail over to alternate signal sources when COMSATs/repeaters are obscured by terrain), consider additional power sources such as mini windmills.
Problem: Patrons want food to eat while they drink, pedal, and watch the game.
Solution: Install deep well compartments into the surface of the bar for nuts, chips, etc., fit with covers (drinks might get spilled despite the leak proof containers in use on board). Offer a free shot to each patron in return for a short sprint to fire up the generator to power a small microwave, or install a charcoal grill and engineer it in a deep walled well so food being cooked on the grill can bounce around but still get cooked. OR limit hot food service to times when the vehicle is not in motion.
Problem: I ate and drank and pedaled and now I need to "use the facilities."
Solution: Hand each patron a bog roll and a garden spade then point them off to the side of the trail. OR coin operated porta-potties at the trail head and along the trail at strategic points that allow the porta-potties to be served by a vendor on a regular basis.
Problem: I ate, drank, pedaled, and drank some more. Getting back in my car and going back down the hill is a bad idea and I didn't bring a DD.
Solution: Temporarily confiscate the patron's keys and then:
a) Let them sleep it off in their car.
b) Offer a private campground at the trail head, BYO tent, camper, trailer.
c) Run a shuttle service between the trail head and local B&Bs.
There are other considerations:
Price Points: What does it cost to do business and offer all of the amenities detailed above? Buy or rent private property for the business? What is the market for this business and how much would it cost to do an effective market survey and subsequently conduct strategic advertising to the perceived market?
Given those data points, what will items and services need to be priced at to cover operations, advertising, and turn a profit?
Legal Issues: Every patron should be required to sign a waiver that holds the off road bicycle bar harmless in every and any circumstance. By signing the waiver the patron openly acknowledges that the land owner, the off road bicycle bar, any subcontractors, and product/hardware/software sources are not liable for anything that happens before, during or after they have visited the off road bicycle bar.
I'll give it some more thought... Maybe I can start the off road bicycle bar as a side business on weekends and holidays.
