What do you do with 75 lbs of tomatoes, 20lbs of red cabbage and some left over cucumbers?

15 qts of spaghetti sauce
7 pts hot salsa
7 pts mild salsa
14 pts pizza sauce
4 pts sweet/hot pickles
3 gallons sauerkraut

We're almost done for the year!!

That 20lbs of red cabbage came in the form of only 3 heads - I've never seen ones so big (they were a foot in diameter, I kid you not). It's going to become my favorite Red Wine Sauerkraut!

A previous weekend's effort was Spiced Peach Butter, Sliced Peaches in light syrup, Raspberry-Peach Jam, Dill Pickles, and Bavarian-style Sauerkraut (green cabbage with caraway seeds and white wine).

[sarcasm] Show off!![/sarcasm] Great job! That's a demonstration of making the most of your home grown produce if I ever saw it! Takes me back to the bad old days of being trapped in the kitchen with my Mom and sisters in the fall to assist with canning... I wanted to be outside with my buddies playing football, baseball, or just rolling around in the dirt! SC, I hope your kids will be engaged in the canning operations as they get old enough to help out, I think it's important to teach kids about preserving food and growing your own. I didn't like the canning part of the harvest season as a kid because it cut into my play time but I sure enjoyed eating the rewards! Let hard work be its own reward. Work hard and the rewards will come to you!

Maple Bourbon Peach Butter, Dill pickles (spicy and not), Dilly Beans (spicy and not), peaches in syrup, bruschetta tomatoes, tomato sauce and salsa.
(garlic, onions, and some of the beans all grown right outside the back door)
Not all pictured as it doesn't all fit on that shelf.

The kids did help out last year, but not this year (it was a long weekend for them since they had today and yesterday off of school so they spent a lot of time playing outside with friends - also something I like them to do while they are still young and enjoy it). Sadly, this isn't any home grown stuff as I haven't had time to garden for the last 2 years now with work taking all of my time (and couldn't produce 75lbs of tomatoes on 0.2 acres even if I tried). We buy everything at the farmers markets in bulk, and are very lucky that we have such great produce to choose from around here.

Did that too! One year got all of it from farmers markets or went out to Brighton to pick it. Got it home, did all the work and bear must have smelled it and decided he needed it more than we did. In all fairness that bear had been breaking into several garages, storage areas. He found ours.

Yummmmm! I can smell it. Enjoy it, especially during the cold winter months.

Every year I say I'm going to can my tomatoes, and every year I find an excuse not to and eat tomatoes morning, noon, and night till their gone. Respect for the fine job :like:
