I like Chickaree's idea, having something cooked low and slow is always a nice meal and it's ready when you get home so you can have your meal right away.
How about cooking something unique to Colorado? What cuisines do your guests prefer, are they willing to try something new? What are your guests expecting? If the meal is more about sustenance and not a fine dining experience then stick with what they want and only provide what it takes to get everyone fed.
If you are up to the culinary challenge, not much beats a nice piece of elk or buffalo on the grill (as long as you know how to cook it), Colorado also produces some of the best lamb in the world. If you aren't up to that much work consider a visit to the Fort (bring money!), the Flying W ranch (very much a tourist trap but still very good grub), or the Bucksnort (IMHO you can't go wrong there) but do that the next day so you are not in a hurry.

Call in a takeout order to Golden Stix (that's the place close to Raven's you mentioned) so you get back in time to show them your home while it is still light, or, consider eating on the outdoor patio at Tony Riggatoni's in downtown Morrison. They have a good selection of reasonably priced dishes and interesting views from their patio.
Great ideas! We grill a lot even in this weather. I love the idea of pulled pork in the crock pot too. Heck, I love ANYTHING in the crock pot. Hope your guest loves the scenery up here and the weather.

My mind works weird,I usually eat according to the weather.....hot,I partake of cool salads,ice tea,light fare.If Cold,nice toasty soups and comfort food. If it's late (after 7 PM) I try to eat light so I can get a good nite's sleep......traveling is energy draining and re-grouping is a must.......ASK what they like and plan around their needs......and water available at the bedside,'cause it's dry and they
just caught off a plane. (My SIL nurse taught me that one)........AREN'T we all lucky to actually live up here and not have to "visit" occasionally!)
