Try this...
http://www.cookstreet.com/recreational/find-courses
Click on the "recreational" tab and check out the calendar of courses.
The classes are a bit pricey, but come highly recommended. The instruction is top notch. Just pick what interests you most...Thai, Indian, French, Sushi...there's even a 4-class series on bread making and special themed events (Mardi Gras with a Cajun menu).
You spend a few hours in a well appointed kitchen and wrap up the class with a fine meal. The bar is open (and included) while you chop, saute, knead, etc.
Don't be afraid to go solo if you can't find a traveling partner. You might meet some fascinating new friends!

Also - think "light rail" to get downtown...

Ok, to get back on topic, here are a few websites. I can't find the one for the class we took, but these look like fun.

I like the ones I've taken at the Lakewood rec center (www.lakewood.org), but they weren't true "cooking" classes. I signed hubby up for some at a cooking school up in Boulder, but that's a haul. I'll have to ask him if he's looked into any others - he's the chef in the family, I just refuse to eat bad food when he's gone, but I don't care for cooking.

"Now, more than ever, the illusions of division threaten our very existence. We all know the truth: more connects us than separates us. But in times of crisis the wise build bridges, while the foolish build barriers. We must find a way to look after one another as if we were one single tribe.” -King T'Challa, Black Panther

The truth is incontrovertible. Malice may attack it. ignorance may deride it, but in the end, there it is. ~Winston Churchill
