Bob, I love me some Kimchi and I love me some... well you probably know where I'm going there. I don't make Kimchi yet, but maybe someday if I can ever retire I might give it a go. Kimchi is an acquired taste, it took me a lot of time in Korea before I was able to get over walking up on a nice looking Korean lady only to catch a whiff of her breath and not vomit on the spot.
For me it's kind of like cheese, I love the really runny, stinky, moldy cheeses but it took me some time to get there. If the cheese stinks like dirty feet and looks like it's past it's prime I'll dive in and take a taste at my own peril.
