I thought it was a bit stupid but it turns out it is traditional American.

"
liberty cabbage
What "patriotic" Americans called sauerkraut during the World War I years during the height of anti-German hysteria here in the United States.
Sauerkraut was renamed liberty cabbage to remove the German connotation, much like what George W. Bush and the Republicans did to french fries by renaming them freedom fries."

My German family came over in 1830 and settled in an Ohio German farming community, they spoke German until World War I. Then learned English very quickly, and tried to not speak German in public. Even a lot of the German food in town was replaced by more typical Midwestern food.
