So I have made this for breakfast and to take as an appetizer or to a pot-luck.
Very easy and yummy.
Ingredients:
1/2 C. butter
10 eggs
1/2 C. flour
1 tsp. baking powder
dash of salt
8-12 oz. canned chopped MILD green chilies
2 C. cottage cheese (16oz)-(I always used the small curd)
4 C. grated Monterey Jack cheese (1 lb.)
Melt butter in a 9x13 pan, set aside. In a large bowl beat eggs, flour salt & baking powder. Add melted butter leaving a little in the pan. Add chilies & cheeses. Mix together & pour into buttered baking pan. Bake uncovered at 350° for 45-60 minutes. Test for doneness with a knife. Cut into bite size squares while hot, but allow to cool slightly before removing from pan.
