Making Garlic Souffle Tonight YUM!

Garlic Soufflé

4 Tbs butter
3 Tbs flour
1 ½ cups milk (room temperature)
1 head roasted garlic (very easy to do many recipes on Internet)
Salt and pepper to taste
3 egg yolks
4 oz. Fontina cheese
½ cup fresh parmesan cheese
6 egg whites
Garlic chives optional

Melt 3 Tbs of butter, stir in flour and cook for 2 to 3 minutes.
Add milk cook for 15 minutes stirring constantly
Add salt and pepper and cool
Remove garlic and mince or smash cloves
Stir in egg yolks, garlic and cheeses (reserve about 2 Tbs of parmesan)
Whip egg whites (stiff peaks that stand and hold their form)
Fold egg whites into cheese mixture
Melt 1Tbs of butter in soufflé pan coat all sides sprinkle parmesan cheese on bottom
Bake at 450 for 18 to 20 minutes

Sounds wonderful! I'll have to try this recipe out soon.

As a safety consideration, you might want to crack a window and have some strike anywhere matches on hand, roasted garlic is magic fart gas fuel!

Its the green on sprouted garlic, you can sub with green onions I would expect.
