Sage! Now I know what to do with the 3ft wide sage plant in the hoophouse. And the overabundance of mint rapidly spreading elsewhere.
Sage Walnut Pesto
¼ cup Italian parsley
¼ cup tablespoons mint
1 cup (2 ½ oz.) sage, packed
2 garlic cloves
½ cup (2 oz.) walnuts, toasted
½ cup (1/2 oz.) grated Parmesan
½ cup (3 ¾ oz.) extra-virgin olive oil
1 teaspoon lemon zest
2 tablespoon fresh lemon juice
salt
Combine first six ingredients in the bowl of a food processor and blend to a rough puree. Scrape down the sides of the bowl. With the machine running stream in the olive oil. Add the zest, lemon juice, then taste and add salt to taste. Adjust seasonings to your preference.
