Agrodolce, or sweet/sour, is a popular flavor profile in Italy. This mix of tiny diced eggplant sauteed in oil, with celery, capers and olives is a great appetizer, small plate or side dish.
Tortilla Espanola -- Spain
Simple and savory, the ubiquitous Spanish tortilla of potatoes, eggs and olive oil is a perfect snack. It plays well with a glass of wine or a craft beer.
