In the Streets of Rome with Francesca 6:00-9:00 $75 pp // $140 per couple
Walk up to the right window in Rome’s city center and you be handed something delicious to carry out. Wrapped in a napkin or a piece of brown paper, these delicious street foods are meant to be savored at the rustic tables just outside.
*Roman pizza - Authentic 00 flour and Pane Angeli yeast from Naples create a crispy, chewy crust which you can top as you wish with meats, cheeses, or vegetables.
*Battered Fried Cod -- light as air with a satisfying crunch and enclosing a steaming succulent fillet
*Arancini -- translation: “little oranges”, these crispy fried balls of creamy, cheesy, Arborio rice hide a treasure of melted cheese or savory meat inside.

The traditional dishes of the Eternal City are simple– based on fresh, locally available ingredients. They reflect the history of a city which has been continuously inhabited for more than 2500 years. In this class, we will learn the techniques for making three iconic Roman dishes.
*Spaghetti alla Carbonara – Along with this authentic recipe and technique we’ll share some history, stories and one of the trickiest wine pairings.
*Saltimbocca alla Romana – The literal translation of this dish is “jump in your mouth”! That’s how good this is! Thin scallopini of ethically-raised veal with parma ham in a silky sauce.
*Artichokes alla Romana – seasonal vegetable prepared in the Roman style.
