Leon Panetta's New Year's Eve toast will be one that has been 10 years in the making. The Pentagon is confirming that a California restauranteur friend of Panetta's will open a bottle of wine with an estimated value of $10,000-$15,000, and the secretary of defense will be one of several friends toasting Panetta's CIA-run mission to get Osama Bin Laden.

I'm interested to know if any wine could last 141 years without turning to vinegar or spoiling. If a private individual is willing to donate such a rare gem I say enjoy the celebration.

If you had to rely on a single factor to determine the aging potential of a wine, it would be the wine’s pH, a measure of acidity. Briefly, red wines with pH levels between 3.4 and 3.6 should age well. Reds with pH levels 3.7 to 3.8 may age a bit, but once you get to a wine with a pH of 3.9 and above, the chances are pretty slim the wine will benefit from much, if any, bottle aging.

I read that today in the Denver Post. Normally that should have been a safe bet.

Me? I couldn't enjy the difference in taste between a $10 and $10,000 bottle of wine.

I have had plenty of wine from the western slope and other local vineyards near many of the cities I have traveled to over the years. I find it hard to blow much more than $100.00 of a bottle of wine and even then it has to be a real special occasion. A bottle of $2 buck Chuck does the same thing for me for the most part.
