What we try to do (key word is try) is when serving the customers, we give them 2 links, (they are not the small ones) a patty, eggs, homefries, pancakes, bacon 3 strips, some fresh made green chili, and bisquits and gravey. Of course the customer tells the ladies what they want also. The good news is you can go through the line as many times as you want. We also serve up sliced peaches and dices pineapple, along with various desserts, coffee and OJ. As I am not on the serving line, the ladies do a damn good job serving it up, I am usually in the rear, cooking the bacon and sauage, and bisquits. Main reason for the way we serve is so everyone gets served and then like I said one can always come back through the line.

I think 2 is fair...2+ 3 bacon strips is really good. My kids use a lot of syrup..

and its a good to have the ladies in all the public contact positions..Nobody wants to be served food by a man. thats too much like jail...Sounds like a pretty good operation you got going. I'm not normally a breakfest guy, but I do have a bulk Wallye connections, and can also get Cod for about 40% retail. Friday night VFW fish Fry's were a tradition in my house..Might want to consider those
