I would have to choose pig. So much more versatile than beef.
Ham, sausage, pork loin, bacon, pulled pork, baby back ribs!
I would miss beef, especially burger and roast beef, but if I had to choose, the El Puerco would win.

That's a tough question... Steamship Round vs. a rack of slow smoked Country Pork ribs? Bacon or Corned Beef hash? Giant, thick Porterhouse steak or Pork Tenderloin cooked low and slow with a North Carolina style Barbeque sauce? Fill-it Mig-non with out a couple of rashers of thick cut, Apple wood smoked bacon wrapped around it? That's just wrong...

Based on the meat I order most often at restaurants, it's chicken. But that's usually part of another dish like a salad, rice, or noodles.
If I had only one meat for the rest of my life, that's a tough one. I love steak, but don't have it often and don't think I'd want it every day, not that I'd be excited about chicken every day either. Pulled pork is great! Fish on occasion is nice too.
Ground beef is the miracle meat. You can put it in anything, not that it's good for you. lol
