It is a type (but I don't know the actual name) of Bachelor Button. I also have a plant - new this year - with the same form, but with deep purple and white. Really unique. I bought it at Sunshine (?) gardens, in Evergreen on 74 and Meadow Dr.
That is centaurea montana. Common names include Perennial Bachelor Button and Mountain Cornflower. I have some too and I've noticed that if after the first flowering is over if you cut it back well it'll flower again.
