BUSINESS BEAT: Evergreen eatery returning to making primarily soup

Da Kind Soups in Evergreen is going back to its roots.

The restaurant on Meadow Drive will close on Friday, spend about a month reconfiguring its space and reopen selling bags of soups. There will be more soup options and bag sizes from single servings to quarts, which will be available for pickup or to ship.

The soups, which are not frozen, can be heated up in hot water, the preferable method, or in a microwave. Soup will be available for purchase in the store, and they are expanding to offer a soup-shipping business.

“We’re going to transition from a restaurant to a kitchen that makes just soup,” said Ariane Speck. She and her husband, chef Dustin Speck, opened Da Kind nine years ago.
