Yesterday at my daughter's baby shower I made my famous Pea salad. Everyone wanted the recipe so I sent it on email and while at it I might as well post it. This is my most asked for recipe.

Pea Salad

I doubled yesterday.

1 (10 oz) package of frozen early peas.
½ lb. bacon fried crisp and crumbled. (I buy the cooked kind and used the small 2.2 oz package for the double batch)
1 C. Cashews ( or more) I used the whole (small) can for the double batch. And used the halves and pieces.
1 small onion chopped fine. (medium for the double)
1 can water chestnuts drained and chopped. (I use the sliced ones and chop that saves a few slices)
½ to 1 Cup Mayonnaise ( I think I used about ¾ cup before the double)
Lawry’s seasoning salt. (this is the secret to the recipe be sure to use Lawry’s)

Add plenty of seasoning salt (to taste) to the mayonnaise while mixing the rest of the ingredients except the cashews. I almost always end up adding some after mixing it together and tasting to see if we need more. I add about 1/3 of the cashews the night before, let it refrigerate over night. Then in the morning I add 1/3 cashews. Then I add the rest of cashews an hour before serving. That way you have some that are soft and some that are crunchy. ( I found that out after making it a few times and liked both ways)

The chili and biscuits look delicious. I love smittenkitchen recipes! I also make a Pea salad recipe with cheddar cheese. I'm looking forward to trying your recipe! Congratulations on your new grand baby! Thanks for sharing these great recipes
