Ok, so here's my first one for you since it's summer and since it's really easy and since everyone loves it.
Guacamole

Two avocados --smashed lightly
one clove garlic--pressed
salt to taste.

Mix it up, add nothing else. Absolutely amazing! Also, if you leave the pit of one avocado in the mixture, it will keep teh guac green much longer.

tonight's dinner -

Nori Rolls and Red Lentil Salad

1.Nori Rolls
Place nori sheets so they overlap on the longer side, smash a ripe avocado on top, season w seasalt/pepper/lemon juice, place some very tender bok choy leaves on top, then thinly sliced red onion, some cucumber, cilantro; roll it all up and slice diagonal.
2.Red Lentil Salad
Cook red lentils
Make sauce: organic French mustard, freshly grated ginger root, lemon juice, sesame oil, garlic, sea salt, pepper, tumeric, cumin, water to thin
Mix red lentils with sauce, cucumber cubes, cilantro, red onions
3. arrange everything nicely on plates with tender bok choy leaves for decoration

vitamin cottage, whole foods or online. You know the best about my favorite recipes is that they are really easy and quick to make. the ginger/mustard dressing I make a whole mason jar full and keep it in the fridge, the red lentils I cook a batch and freeze part of it, some of the ingredients are in the garden, its really quick...

My favorite 'old family recipe'... French Toast like you've never had it before:


1/2 cup of flour
1/2 cup of milk
1 tsp baking powder
eggs
cinnamon to taste

mix it all together ... use as many or few eggs as you wish
Mine is typically about as thick as a pancake batter but you can make it thinner with more eggs if desired
dip bread in the mixture and then cook in oil (frying pan with a layer of oil heated up)
flip halfway through to cook other side

(the cinnamon was added by my husband but really adds to the recipe)

I made this a few months ago as I was looking for a "light" salad in this hot weather. Turned out really delicious.

3 cups elbow macaroni, cooked and cooled under cold water
1 small onion, grated
2 medium garlic dill pickles, grated (I can't find these, so I used kosher dill's and half TBSP garlic powder)
salt and pepper
1 1/2 cups mayonnaise or mayo base salad dressing (Less if you like it "dry")
pickle juice
1 tablespoon chopped fresh dill (I used more like 3)

Directions:
Place cold cooked macaroni along with grated onion and pickle in a large mixing bowl.
Add salt and pepper, mayo and enough pickle juice to moisten. Be carful with the juice, you don't want the dressing too runny.
Add dill if you like and toss to coat.
Serve.
